Extra Creamy Steel Cut Oats

Cozy up with these extra creamy banana steel cut oats! These oats are also great for meal prep during the week, just add to separate containers and reheat for an easy on-the go breakfast! You could also double the recipe if you want breakfast for the whole week. Enjoy!

Ingredients
1 cup steel cut oats
1 tbsp butter
3 cups water
1 cup milk
1 tsp cinnamon
1/4 tsp salt
Top with: bananas, walnut crumbs, and coconut sugar/brown sugar or maple syrup for added sweetness

Directions
1. In a medium size saucepan over medium heat, bring the water and milk to a simmer.
2. In another small sauce pan over medium heat, add the butter until melted. Add the steel cut oats, stirring occasionally until golden (this gives the oats an elevated toasted flavour)
3. Once the milk mixture is simmering, add the oats and reduce heat to low. Simmer for 20 minutes until thickened, be sure to stir every 5 minutes or so to avoid the oats scorching the bottom of your pan.
4. After 20 minutes the oats should be very thick, add your salt and cinnamon and continue stirring for 5 more minutes. Remove from heat, add to your favourite bowl and top with a drizzle of milk, bananas, walnut crumbs, and coconut sugar for added sweetness. Enjoy!
