Peaches & Cream Cashew Oat Bars

These bars are so delicious, packed with all the nutrients and perfect for summer. Sub cream for peach Greek yogurt for added creaminess and your favourite peach jam. Enjoy!

Ingredients
Makes 16 squares

1 cup raw cashews (unsalted)
1 cup rolled oats
1/2 cup cashew butter
1/3 cup liquid honey
1/2 tbsp white ground chia
1/2 tbsp hemp hearts
1/2 tbsp flax seed
1/2 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp sea salt

For the top: 1/2-1 cup peach jam and 1/2 cup peach Greek yogurt, top with extra rolled oats and hemp hearts

Directions
1. Blend the cashews into a crumb, add to a medium size bowl along with the oats, cashew butter, honey, white chia, hemp hearts, flax seed, vanilla extract, cinnamon, and sea salt.
2. Mix well with a wooden spoon or spatula. In a 8’ x 8’ baking dish, lightly grease with coconut oil then add the mixture to the dish by spreading it out with a spatula or your fingers until well pressed.
3. Top with peach jam, Greek yogurt, hemp hearts, and rolled oats. Cover with plastic wrap and refrigerate for 4 hours or overnight. Cut into 16 squares serve and enjoy as a breakfast, snack, or dessert option :)
